RECIPES FOR HCG DIET

Fruit Smoothie

2 cups ice, 2 cups diet liquid (Sprite, 7-up, or of carbonated drink) 1/4 c Walden Marshmallow Cream, 2 Tablespoon sugar free fruit product (either fruit dip, fruit spread or fruit syrup), 2 Tablespoon Splenda Baking formulation, ½ teaspoon extract (that matches your fruit product).

Blend all together, enjoy (optional, your fruit can be added to this to become your fruit serving and make it a richer smoothie, like your apple, strawberry, orange or kiwi)

Chicken Salad (1 protein, 1 vegetable and ½ fruit serving)

Cooked chicken 4 ounces, 2 cups total volume of diced celery, sweet onion, cucumbers, ½ cup chopped apple, ¼ cup Walden mayonnaise, 1-2 tablespoon Walden bacon dip, 1 teaspoon Splenda, 2 tablespoon dill, Salt and pepper to taste.

Mix and chill, then serve on a bed of lettuce with few cherry tomatoes. This is good.

Egg Salad (Protein only)

1 Whole boiled egg and 3 boiled eggs with yolk removed), 2 Tablespoon Walden Mayonnaise, ½ teaspoon mustard, 2 Tablespoon Dill relish, 1 teaspoon lemon juice, ¼ teaspoon paprika, ½ teaspoon horseradish.

Mix and chill, then serve on a bed of lettuce with a few cherry tomatoes.

Broccoli Soup (vegetable serving or vegetable and meat serving)

1 Package frozen broccoli, 4 cups fat free chicken broth, 1 jar Walden Alfredo Sauce, 1 teaspoon chili powder, 1 teaspoon onion powder.

Put all of the ingredients in a pan and bring to a boil. Let the soup simmer before serving.

Cucumber Salad

8 ounces thinly sliced peeled cucumbers. Walden sugar and fat free slaw dressing to taste. (about 2 tablespoons)

Toss all together. Chill at least an hour before serving. (sliced apples or orange can also be added for a fruit and vegetable salad)

Stir Fried Cabbage Slaw

8 ounces finely shredded cabbage, 3 Tablespoon non fat chicken broth, 1 Tablespoon chopped onion, 1 Tablespoon miniced garlic, 1 Tablespoon liquid aminos, 2 tablespoon Walden Thousand Island Dressing, 1 tablespoon Walden Caesar Dressing, ½ teaspoon splenda.

Preheat a skillet; add broth, onion, garlic and cabbage. Stir fry 2-3 minutes until tender. Mix together the 2 dressings and the splenda. Pour over cooked. Serve warm as a side vegetable.

Asparagus Salad

1 pound asparagus, tough ends snapped off, rinsed, deiced into 1 inch pieces, 1 teaspoon onions, ¼ cup chopped celery, 2 tablespoon Walden sugar/fat free Raspberry Vinaigrette Dressing, 1 tablespoon Walden sugar/fat free French dressing, 1 tablespoon rice vinegar, 2 tablespoon of splenda

Boil a pot of water, add asparagus, Boil for 3 minutes, Mix the dressings, vinegar and splenda together. Drain asparagus and put in bowl, add onions and celery. Drizzle dressings and splenda. Toss. Cover and refrigerate 3 to 4 hours before serving. (Peeled, cored, sliced apples or orange slices can be added to make a fruit and vegetable salad)

Texas Red Chili (either vegetable or vegetable and meat serving)

1 package of chili spices, 1 24 oz. can chopped tomatoes ( can use 1 jar Walden marinara sauce), 1 cup Walden Ketchup, 1 teaspoon Liquid smoke, ½ large onion coarsely chopped, 2 cups fat free beef broth, ½ teaspoon salt.

Heat skillet until hot, sauté onions in the beef broth until clear. Add the rest of the ingredients. Simmer until thick. 2 cups is 1 vegetable serving or add cooked meat as both a meat and vegetable serving.

Cauliflower Bake

1 head cauliflower cut into pieces, 1 jar Walden fat/sugar free Alfredo Sauce

Bring pot of water to a boil, add cauliflower. Boil until soft. Drain, put into oven proof casserole dish. Top with Alfredo Sauce. Cover and bake at 350 for 20 minutes. This is good.

French onion soup

1 onion, thinly sliced, 2 cups non fat beef broth,3-4 cloves minced garlic, ½ teaspoon splenda, ¼ teaspoon black pepper.

Heat saucepan, Add onion, garlic and 1 tablespoon broth. Cook uncovered 5-10 minutes. Stir in splenda, cook 10-15 minutes until onions are caramelized. Add remaining broth and bring to boil. Reduce, heat simmer covered for 20 minutes. Add black pepper. Serve.

Tomato Soup

4 oz. tomato, 1 clove garlic minced, ½ cup water, ¾ teaspoon basil, 1 teaspoon onion powder, salt and pepper.

Preheat broiler. Cut tomato in half, place tomatoes on nonstick baking sheet, flat side down. Broil 5-10 minutes until skins are blistered and blackened. Let cool, then remove skins and seeds. In medium saucepan, heat ¼ cup water over medium heat. Add onion powder and cook 5 minutes, then add garlic powder and cook 2 more minutes. While water/spices are cooking, put tomatoes in blender an d puree until smooth. Stir in tomato puree into saucepan and add the rest of the water (1/4 cup). Bring to a boil, and then simmer 5 minutes. Stir in basil, salt and pepper. Serve

Spicy White Chili

4 oz. chicken, cooked and then shredded, 1-4 nonfat chicken broth, depending on how soupy you like you chili, 4 cloves minced garlic, 1 tablespoon dehydrated onion flakes, ½ teaspoon oregano, ½ teaspoon cumin.

Preheat soup pot. Add all ingredients, bring to a boil. Reduce heat and simmer 30 minutes. Can be cooked in a crock pot for 1-2 hours.

Curry Shrimp

4 oz. shrimp, cleaned, cooked or raw, 1 teaspoon minced dehydrated onion, 1 teaspoon minced garlic, 2 tablespoon water or fat free vegetable broth, ¼ teaspoon curry powder, ¼ cumin.

Preheat skillet. Add onion and garlic, sauté 1-2 minutes. Add shrimp and seasonings and sauté until cooked if raw or warmed if already cooked.

All purpose white fish recipe

Heat oven to 500 degrees. Place 4 ounces white fish on baking sheet. Squeeze on lemon juice. Sprinkle with seafood or other desired seasonings. Bake 10 minutes until flaky.

All purpose sirloin steak recipe

Heat grill to highest temperature. 4 ounce of steak sprayed with liquid smoke and sprinkle with favorite spices. Grill 3-5 minutes.

All purpose chicken breast recipe

Heat grill to highest temperature. 4 ounces chicke with desired spices. Grill 5-7 minutes.

Chicken and Celery Salad

4 ounces chicken, cooked, cooled, cubed, 3 celery stalks, chopped, ½ cup Walden sugar/free mayonnaise, ¼ teaspoon onion powder, ¼ teaspoon salt and pepper.

Mix all ingredients in bowl. Refrigerate, serve chilled. (would also be good with chopped apples to make a meat, vegetable and fruit salad)

Cream of chicken soup with celery

4 ounces cooked and chopped chicken, 3 celery stalks chopped, 1 teaspoon basil. 1 teaspoon of oregano, 1 teaspoon chili powder.

Preheat oven to 350. Place ½ of diced tomato in casserole dish, add meat on top and top with mined garlic. In a small bowl, toss the rest of the tomatoes with oregano, basil and chili powder. Place on top of meat. Cover tightly with foil and bake for 45 minutes.

Steak Chili and Tomatoes

4 ounces lean meat, ground or thinly sliced, 1 tomato, ½ cup water or nonfat beef broth, 3-4 clove garlic minced, ½ teaspoon onion powder, ½ teaspoon oregano, ¼ teaspoon cumin, ¼ teaspoon black pepper, ¼ teaspoon cayenne, ¼ teaspoon basil, ¼ thyme.

Heat skillet to medium. Add minced garlic and 1 tablespoon water or broth. Saute 2-3 minutes. Increase heat, add ground/sliced steak and saute’ until brown-about 5 minutes. Add all seasonings and cook 3 minutes. Add more water/broth as necessary. While meat is cooking, dice ½ of tomato and place other1/2 in food processor and puree. To sauce pan, add diced tomato, tomato puree and rest of broth. Turn down heat to low and simmer to desired consistency. Can prepare in advance and freeze.

Hot and Sour Shrimp and Asparagus

4 ounce shrimp, cleaned and raw, Asparagus cleaned, ends snapped, cut into 1 in. pieces, 2 cups fat free chicken or vegetable broth, 2 tablespoon rice vinegar, 1 tablespoon liquid aminos, 1 teaspoon splenda, ½ teaspoon white pepper, ¼ teaspoon ginger, 1 teaspoon either sambal oelek or red hot pepper flakes.

In saucepan combine broth, vinegar, aminos, splenda, ginger, sambal or peppers, white pepper. Bring to boil, reduce heat, cover and simmer 2-3 minutes. Add shrimp, return to boil. Add asparagus, cover and simmer 5 minutes.

Shrimp and Asparagus Stir Fry

4 ounces shrimp can be raw or cooked, simply alter cooking time to desired doneness, 1-2 cloves minced garlic, Asparagus strained , ends snapped, cut into2 in. pieces , 8 ounces, 1 tablespoon minced ginger, Liquid aminos to taste 2 tablespoon divided, fat free vegetable broth (about 1 tablespoon as neededto stir fry shrimp)

Preheat a saucepan to medium heat. Add shrimp, garlic, ginger and 1 tablespoon of aminos. Stir fry for 3-5 minutes (if needed add 1 tablespoon of water). Remove shrimp, add asparagus. Drizzle with rest of liquid aminos, stir fry 2-3 minutes. Add shrimp back in and heat 1 more minute. Serve and enjoy.

SEASONINGS

Caribbean Rub (good for chicken or shrimp)

1 tablespoon parsley, 1 teaspoon cumin, 1 teaspoon chili powder, ½ teaspoon pepper, ½ teaspoon allspice, ¼ teaspoon cinnamon.

Mix all together in a baggie. This will be enough to spice 2 meat servings. Simply place meat in baggie and shake to coat, then place in refrigerator 20 minutes before cooking.

Greek Seasoning (good for steak or chicken)

2 teaspoon oregano, 1 ½ onion powder, 1 ½ teaspoon garlic powder, 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon parsley, 1 teaspoon basil, 1 teaspoon cinnamon, ½ teaspoon nutmeg, ½ teaspoon thyme.

Combine all in a baggie. Enough for at least two meat servings. Place meat in the baggie to coat, refrigerate 20 minutes and then cook meat.

BBQ Rub (beef, lean pork loin, chicken)

2 teaspoon paprika, 1 tablespoon splenda, 1 tablespoon ground cumin, 1 tablespoon black pepper, 1 tablespoon chili powder.

Combine all in a baggie. Place meat in baggie to coat, remove meat from baggie, and then cook.

Seafood Seasoning (good for shrimp and all white fish)

1 Tablespoon ground bay leaves, 2 ½ teaspoon celery seed, 1 ½ dry mustard, 1 ½ teaspoon black pepper, ¾ teaspoon nutmeg, ½ teaspoon ground cloves, ½ teaspoon ground ginger, ½ teaspoon paprika, ½ red pepper, ¼ teaspoon cardamom.

Combine in baggie and store in air tight container. Coat meat prior to cooking.

 

 

These are just a few of the recipes you can use while doing the HCG diet. You can use your own imagination to create meals. Remember to stay away from white sugar, white flour and white potatoes.

You can use any sweetener that does not have calories.
